
CEIA IS A FINE DINING EXPERIENCE IN OUR LISBON SANCTUARY - SANTA CLARA 1728.
Ceia is our fine dining experience where a selected group of people gathers around one table, sharing the same menu and space, creating an evening of notable exchanges.
"Ceia" - the Portuguese word for supper - recalls for comfort, tradition and friendship. It also represents one of the deepest values within the Portuguese culture, the pleasure of preparing and sharing our food, with the ones we cherish the most, while creating the opportunity to share a significant moment in time, at the end of each day.
In the first chapter we explored how life is being restored to the soil through regenerative agriculture and holistic management at Herdade no Tempo. In the second chapter our awareness expanded, reflecting on the nine planetary boundaries identified by Professor Johan Rockström, from biosphere integrity, climate change, and ocean acidification to stratospheric ozone depletion, novel entities, atmospheric aerosol loading, biogeochemical flows, freshwater use, and land-system change.
The second chapter, called The Last Harvest, represented a menu focused on soil regeneration and the pressing challenges threatening our planet, including scarcity of food and water, desertification, and the fragility of Earth’s systems.
Now in the third chapter we continue to deepen our vision, from tending our farm’s soil to understanding the broader limits of our planet. This evolution shapes our gastronomic approach, reminding us that responsible choices today ensure what we value will endure for future generations.
Let Head Chef Tiago Ramos and his team invite you to experience our current tasting menu, The Garden of Earthly Delights - inspired by Hieronymus Bosch’s masterpiece, unites our vision with a symbolic, almost biblical narrative, a meditation on abundance, fragility, and the delicate balance of life.
