In our city home we welcome Solo (the Portuguese word for "soil"), a lunch restaurant where our guests have the opportunity to indulge in a lightweight and fresh meal, crafted with the nutrients we plant, nurture and harvest in our estate in Montemor-o-Novo.
At Solo, our team was inspired to create a lunch experience that emphasizes sustainability and creativity, born from our commitment to repurpose the ingredients that would have gone to waste at our fine dining - Ceia. Every dish we serve at Solo is a celebration of flavor and responsible sourcing. The ingredients we use are planted, nurtured and harvested in the soil of our very own estate. This connection to our land ensures that each meal reflects our dedication to quality, environmental stewardship and the wealth of the natural produce that finds in our soil, an abundant source to prosper from.
The menu features a lightweight and broad portion of vegetables, with vegetarian and non-vegetarian options. Our Head Chef and team have prepared a 3-moment menu that nourishes both body and spirit, while simultaneously inviting guests to reflect upon a commitment to a sustainable, mindful living.
